Description

'The Whole Enchilada Fiesta' 1990 Joseph Ireland Signed Poster

Once a highlight of every September in Las Cruces, The Whole Enchilada Fiesta celebrated everything southern New Mexico holds dear — community, culture, and food. From 1980 through 2014, locals and visitors gathered downtown to watch Roberto Estrada and his team craft a record-breaking 10-foot-wide enchilada, recognized by Guinness World Records and featured nationwide. The Fiesta became more than a festival — it was a symbol of local pride, family, and togetherness under the bright desert sky.

This 1990 signed commemorative poster, created by Joseph Ireland for the Fiesta’s 10th Anniversary, captures that joy and color in artful detail. Sunlight filters across a lively market scene, echoing the warmth of the Mesilla Valley and the spirit of community that defined the event. Published through Wade Fine Arts, Santa Fe and Adobe Patio Gallery, Old Mesilla, it’s both a nostalgic keepsake and a finely composed regional artwork.

Trained at the American Academy of Art in Chicago, Joseph Ireland is known for his softly structured, impressionistic style and skillful handling of light — qualities that bring painterly depth to this celebratory print. Today, as new residents discover the story of The Whole Enchilada Fiesta, this poster offers a vibrant window into Las Cruces history — a reminder of shared heritage and the joyful traditions that shaped the city’s heart.
